Chocolate Chip Cookies at the Torino Games

Janet Jones made these raw chocolate chip cookies at the Torino Games last week. She shared them with Sly Stone and Shani Davis

Almond Milk

1 Cup almonds, soaked
3 Cups coconut water.

1/2 vanilla bean or a little vanilla extract to taste
2 t cinnamon

Optional:
soak any dried fruit you wish to add, soak for 4 to 6 hours

Blend up or use a food processor with all ingredients until smooth.

Strain it through a nut milk bag, cheesecloth, or nylon stocking. Squeeze to get all the liquid out.

Enjoy the milk with granola, dessert, or alone.

Dehydrate the pulp at 110 degrees for 8 hours or until dry. Sprinkle on desserts, salads, or use as "flour" in bread or cookie recipes.

Chocolate Chip Cookies

Chocolate Chips
1 cup almond butter or tahini
1 cup agave nectar or 3/4 cup raisons
1/2 cup mesquite meal
1/2 cup carob powder or 20 peeled cacao beans (ground)
1/2 tsp. vanilla extract (optional)
2 pinches of celtic sea salt

Process everything till nice and smooth. Spoon this mixture in a heavy duty ziplock bag. Use it as a piping bag and cut one of the corners.

Then pipe chip size balls on dehydrator racks. Dehydrate these suckers for 15 hrs. at 115 degrees or till crisp.

Cookie Dough
1 1/2 cup soaked, dehydrated, ground almonds
5 tbs. coconut oil
3 tbs. agave nectar or 2 tbs. honey or 10 dates
1/2 vanilla bean or 1 tsp. vanilla extract
pinch of salt
1/3 cup chopped pistachios

Mix everything till smooth in a food processor. Then fold in the chocolate chips. Shape into cookie shapes and dehydrator racks. Dehydrate for 12 hrs or till crusty on top and moist in the middle.

Serve with chilled nut milk! YUMMY!

**Warning- these are addicting, eat with caution and extra enzymes!
